Kotnov Castle was converted into a steam-powered brewery in the 17th century. It was rebuilt and modernized several times. Major alterations took place in the second half of the 19th century and at the beginning of the 20th century. As late as around 1860, a large part of the castle buildings still stood. In the photograph from the end of the 19th century, one of the oldest houses in Tábor, the jailhouse, can still be seen (the house with chimneys in the corner and the adjoining long narrow wing). Beside it is the fermentation room of the castle brewery and behind it the malt mill. At the beginning of the 20th century a new large brewery building was constructed here, today Hotel Dvořák.
